SKIRT STEAK WITH CHIMICHURRI
¾ tsp ground cumin, divided
¾ tsp black pepper
¼ tsp kosher salt
1 container (6 oz) cilantro lime pesto
1 lb skirt steak

Prep Time: 8 minutes    Total Time: 22 minutes
  1. Heat outdoor grill or stovetop grill pan. Stir ½ tsp each ground cumin and black pepper into the cilantro lime pesto
  2. In a small bowl, combine ¼ tsp each ground cumin, kosher salt and pepper. Spinkle both sides of steak with mixture.
  3. Grill steak 5 to 6 minutes, turning once, for medium-rare. Let rest for 10 minutes; slice and serve with chimichurri.
